Ms. Megan's Mac and Cheese

Ms. Megan's Mac and Cheese

Ingredients

1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon mustard
3 cups milk
1 large egg
12 ounces sharp cheddar, shredded
(could also use Pepper Jack cheese or other cheeses as part of the 12 ounces of cheese)
1 teaspoon kosher salt
Fresh black pepper

Options for additional toppings, if desired:

Bacon bits
Bread crumbs
Small chunks of ham

Directions

Preheat oven to 350 degrees F.

In a large pot of boiling, salted water, cook the pasta.

In a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk and 3/4 of the shredded cheese. Then slowly add in a whisked egg, stirring as you go. Season with salt and pepper.

Finally, fold the macaroni into the mixture and then pour the macaroni and cheese into a 9x13 casserole dish. Top with remaining cheese.

Bake for 30 minutes. Remove from oven and rest for five minutes before serving. Yum!
